Today I’m sharing a Korean dish that’s just as delicious as bulgogi. Honestly, it might even taste more premium.

If you love bulgogi, you’re going to love this. It has that same sweet and savory flavor, but in a juicy, tender patty form that feels a little more special.

It’s incredibly versatile too. Serve it with rice, pair it with simple side dishes, or even use it as a burger patty or slider. It works with everything.

Cooking Tips

  • Use Pork for Extra Juiciness
    Using only ground beef can make the patties slightly firm. Mixing in some ground pork will make them much more tender and juicy. Alternatively, use 80/20 ground beef for better fat content.
  • Cook on Low Heat
    Because of the sweet marinade, the outside can burn quickly. Cook the patties over low heat to ensure they cook evenly without burning.
  • Check for Doneness
    To check if the patties are fully cooked, poke the center with a chopstick or fork.
    If the juices run clear, they’re done.
  • Press the Center
    When shaping the patties, press the center slightly more than the edges. This helps prevent the middle from puffing up too much during cooking and keeps the shape even.

Ingredients

  • Meat
    • 1 lb (454g) ground beef + pork total
      (use mostly beef, but replace 1/4 lb (113g) with ground pork for a juicier texture)
  • Seasoning
    • 3 tbsp sugar (39g)
    • 0.5 tbsp garlic powder (4g)
    • 3.5 tbsp soy sauce (35g)
    • 1 tbsp honey (13g)
    • 2 tbsp sesame oil
    • 1 tbsp ground/crushed sesame seeds
    • Black pepper (3 pinches)
    • 1 jalapeno, finely chopped
    • 1/8 onion, finely chopped
  • Additional
    • 1 tbsp breadcrumbs
    • Oil (for cooking)

Instructions

  1. Finely chop the jalapeno and onion.
  2. In a bowl, mix all the seasoning ingredients together.
  3. Add the sauce to the ground beef and gently mix with your hands. Mix just until everything is evenly combined. Don’t overmix.
  4. Add 1 tablespoon of breadcrumbs and mix again.
  5. Form into round balls, then flatten to less than 1/2 inch thick.
  6. Heat oil in a pan and cook over low heat until fully cooked through.
